In this webinar, Associate Professor Dr. Hannah Holscher examines the complex relationship between diet, the gut microbiome, and human health. The session explores how food processing – including factors like temperature and pH – alters nutrient bioavailability and influences microbial metabolism. Dr. Holscher discusses the fermentation of undigested fibres into beneficial short-chain fatty acids, as well as the direct and indirect impacts of dietary fats on microbiota through bile acid secretion. Drawing on research from her own laboratory, she connects these microbial-derived metabolites to outcomes in gut health, adiposity, and cognition, specifically highlighting the metabolic effects of nutrient-dense foods like nuts and avocados.
