Food Chemical Intolerance involves adverse reactions (involving the skin, gastrointestinal tract, respiratory tract, and the central nervous system) to specific chemicals common to many different foods. These include the natural salicylates, amines, glutamate and various additives (e.g. colours and preservatives), gluten and /or milk. The most reliable way to identify which food chemicals may be contributing to symptoms is to eliminate all possible trigger substances at the same time, assess if there is an improvement, and then to reintroduce possible triggers one by one by way of systematic food challenges. In this webinar, Dr Swain describes the Diagnostic Elimination Diet and Challenge Protocol, a method was developed at the Royal Prince Alfred Hospital (RPAH) Allergy Service over 47 years ago. This protocol is utilised for the investigation and management of chronic urticaria/angioedema, Functional Gastrointestinal Disorders, headache/migraine and other food-related disorders.
